Apparently… this is called the Parsnip Refresher.

It’s not one for the faint-hearted, that’s for sure. I think this is for the more serious of smoothie-goers.

What you’ll need…

2 x apples
1 x small parsnip
1 handful of mint
1 glug of Alpro almond milk
1 tbsp natural yoghurt
Some ice cubes - crushed if possible

Peel, chop and juice all raw ingredients, and then pour in the yoghurt and Alpro almond milk. Yes, you can taste the parsnip, but that’s ok. It’s kind of spicey and adds a kick to the apples and mint.

Fact: In Scotland parsnips are still known as white carrots - according to www.britishparsnips.co.uk and in Roman times they used to be used as an aphrodisiac… bring out the parsnips this Valentine’s Day, eh love?
